Ingredients

  • 4 eggs
  • 250g caster sugar
  • 200g dark chocolate
  • 100g unsalted butter
  • 60g plain flour
  • 60g cocoa powder
  • 150g white chocolate

Method

Start by melting the chocolate and the butter together in a microwave by heating it for 30 second bursts give the mix a stir in between each burst. Once the chocolate has melted leave to one side to cool slightly, in a separate mixing bowl place the eggs abs sugar in and lightly whisk together without incorporating too much air.

Pour the chocolate mix into the eggs and whisk together to combine, sieve the flour and cocoa powder into the chocolate mix and fold through until completely smooth, then chop the white chocolate into small chunks and fold through the brownie mixture.

Line a square shallow cake tin with butter and cocoa powder all over and pour the brownie batter into the tin and bake in a 160-degree oven for 30-35 minutes until a crust has formed on the top then leave to cool completely at room temperature.

Once cooled melt the remaining white chocolate in the microwave and cut the brownie into roughly 15 equal-sized squares, drizzle the brownies with the white chocolate and ENJOY!!
