Seaweed cured mackerel, dressed Salcombe crab, passion fruit, cucumber, dill cracker

Marinated Cheltenham beetroots, whipped goats’ cheese, pink pepper honeycomb, charred lemon curd

Whipped chicken liver parfait, mushroom jam, madeira jelly, cep crumb, potato brioche


Glazed short rib of Eckington beef, caramelised cauliflower, Berkswell cheese, smoked bone marrow 

Herb crusted breast of guinea fowl, slow cooked leg, herb purée, salt baked leek, truffle bolognaise

Pan roasted local venison, suet pudding, hay baked celeriac, smoked bacon, chestnut

Roasted loin of Cornish hake, saffron potato, braised fennel, bouillabaisse broth, rouille & croutons

Hay baked celeriac, smoked celeriac purée, toasted hazelnuts, wild mushrooms, celeriac jus


Blood orange tartlet, white chocolate & tarragon, blood orange sorbet, almond crunch

Poached local rhubarb, muscovado custard, oat crumble, hibiscus jelly, rhubarb sorbet

Dark chocolate marquise, burnt orange, honeycomb, salted caramel ice cream

Creme fraiche mousse, ginger beer jelly, frozen lemon curd, lemon thyme, meringue

Selection of local cheese, spiced fig chutney, seeded crackers, quince jelly
