Soy glazed south coast mackerel,
smoked mackerel parfait, gooseberry ketchup, garden herb and whey sauce, radish

“Coronation crab”,
handpicked Salcombe crab, apricot, curry, baby gem lettuce, almond

Croquette of Gloucestershire pig’s head,
sauce gribiche, smoked eel, baked celeriac, Granny Smith apple


Sirloin of Eckington Highland beef,
smoked onion, short rib & potato terrine, onion choucroute, braised ox tongue jus

Roast rump of Broadway lamb,
slow cooked shoulder, Evesham broccoli, anchovy, goat’s curd, black garlic

Pan roasted south coast cod,
butter poached lobster, Jersey royal potatoes, broad beans, lobster veloute

Breast & leg of Cotswold chicken,
Spring peas, bacon marmalade, chervil gnocchi, Tewkesbury mustard sauce

Salt baked heritage carrots,
whipped goats’ curd, black garlic, hazelnut dukkah, spiced carrot sauce


Macerated English strawberries,
iced cheesecake, sweet woodruff, strawberry sorbet, whipped lemon curd

Apricot & lemon thyme mousse,
poached apricot, Earl Grey ice cream, brown sugar meringue

Caramelised white chocolate delice,
slow cooked banana, Cheltenham coffee ice cream, banana bread

Whipped dark chocolate cremeux,
passion fruit, yoghurt sorbet, pistachio cake

Selection of individually garnished English cheeses,
seeded sourdough & sea salt crackers
